Sunchokes, also known as Jerusalem artichokes, are a great source of prebiotic fiber, while artichokes are rich in antioxidants and have been shown to support liver health. Plus, both are root vegetables making them a versatile ingredient that can be roasted, mashed, sautéed, or pickled to add a flavorful twist to many dishes. Let’s dig in and discover the many benefits of these amazing foods! Class will be led by Registered Dietitian Nutritionist Taelin Flores. Recipes will be shared with participants.
